Well, this wasn’t quite a disaster, but I wouldn’t call it a success either.
I saw The Pioneer Woman’s recipe for polenta, and thought it would be a nice change from the usual pasta/bread/rice/potato starch options available at our table.
Have you read Heat? Bill Buford has a lot to say about just how difficult it is to make polenta, so I shied away. But Ree’s photos were so enticing that I thought I could do it.
I didn’t pour the cornmeal slow enough, as my polenta was lump-city, and I only had parmesan cheese, so my polenta lacked the sharp flavor Ree’s had. But it was a nice change from our go-to carbs. And I’ll try it again with my fingers crossed next time.
