Happy Belated National Margarita Day

Yes folks, I am a day late to the National Margarita Day party.  But who says a person’s love of margaritas has to be confined to 24 hours?  My love of margaritas knows no bounds.  As such, I consume them not only as drinks, but also in cupcake form.  I’ve done it before, and now, I’ve done it again.

These little guys are unlike their box-mix predecessors.  The beauty of making a cake from scratch is that the sugar to, in this case, lime ratio is much more manageable.  The flavors are balanced, the cupcake is tart enough to offset the sweet, tequila-infused frosting.  As with so many foods that feature citrus, the secret is in the zest.  It’s a star in the cupcake and the frosting.

To make 24, you will need:

For the cupcakes:

  • 3 C flour
  • 1 T baking powder
  • 1/2 tsp. salt
  • 1 C (2 sticks) butter, at room temperature
  • 2 C sugar
  • 4 eggs, at room temperature
  • 3 limes, zested and juiced
  • 1/2 tsp. vanilla
  • 1 C buttermilk
  • 1/4 C tequila, optional (or 1/2 tequila, 1/2 orange liqueur mixture)

For the frosting:

  • 2 sticks butter, softened
  • 4 C powdered sugar
  • 1 tsp. lime juice
  • zest of 1 lime
  • 1 T tequila
  • 1/4 tsp. salt

Preheat oven to 325 and line muffin tins with paper liners.  Mix flour, baking powder, and salt in bowl and set aside.  Beat butter and sugar in mixer until light and fluffy, about 3 minutes.  Add eggs, one at a time, scraping down after each addition as necessary.  Add lime zest, lime juice, and vanilla.  Add flour and buttermilk in alternating parts, mixing each just till incorporated.  You want to start and end with flour.  Fill muffin tins 2/3 full, and bake cupcakes 22-25 minutes, until a tester inserted in the center comes out clean.

When cupcakes are out of oven, and still warm, brush with tequila, if desired.

When cupcakes are cooled completely, make frosting.  Cream butter in mixer till lighter in color, 3-5 minutes.  Slowly incorporate sugar.  When it looks like the mixture can’t take anymore, add liquids, and continue mixing.  Add remaining sugar, zest, and salt, and mix till smooth.

After frosting cupcakes, I rolled the edges in green sanding sugar to imitate that salt rim.
