And just like that, Sunday dinner became breakfast (tacos) for (Sunday) dinner.
I sauteed the chorizo, fried up some small-diced potatoes, and chopped tomatoes and avocado. We skipped the scrambled eggs, as the addition of shredded cheddar made dinner plenty hearty.
I only had one taco but I stuffed it enough that it was about the size of a Chipotle burrito. These things are seriously amazing.
