The cool part about being a grown up is that you get to choose what you want to do almost all the time. It’s incredible, if you think about it. In our house, we choose to make some days special. We don’t particularly care what days they are, but every once in a while, it becomes time to do something more than the usual.
On New Year’s Eve, that meant steak (this one, which was great, but not photo-worthy), and fancy potatoes. Which are really crunchy roasted potatoes, which are actually quite simple, except that they take a little bit longer to make. Extra time = extra special. Duh. I remember reading about this method of cooking potatoes in Cook’s Illustrated. The idea is that you par-boil the potatoes, then rough them up, then roast them. This creates a ton of surface area to crisp up. It’s brilliant.

Wow. I had the fake version–with seasonings and everything–in french-fry form at Smashburger last night. I’m sure yours are MUCH better!
