Latkes, Latkes, Good to Eat

Does anyone else remember that little rhyme from elementary school?

I had never made latkes from scratch before, and I am so glad I did.  It should not surprise anyone that this recipe from Smitten Kitchen is spot-on.

These were super-simple to make, and packed full of flavor.  They came together quite quickly, and my family polished them off faster than that.  I made a double batch, and this was all we had left to show for ourselves.

I’m ready to take on all kinds of new potato dishes now.
